Quinoa and Kale Superfood Salad

Boost your nutrient intake with this colorful and flavorful quinoa and kale salad, featuring a medley of superfoods and a tangy lemon vinaigrette.


  • 1 cup cooked quinoa, cooled
  • 4 cups kale, chopped and massaged
  • 1/2 cup blueberries
  • 1/2 cup pomegranate seeds
  • 1/4 cup chopped almonds
  • 1/4 cup crumbled goat cheese (optional)


  • In a medium bowl, whisk together chia seeds, almond milk, cocoa powder, maple syrup, vanilla extract, and a pinch of salt until well combined.
  • Cover the bowl and refrigerate for at least 4 hours or overnight, allowing the chia seeds to expand and thicken the mixture.
  • Before serving, give the pudding a good stir to ensure even texture. Divide into individual servings and garnish with fresh berries and shaved dark chocolate, if desired.
