Raw Zucchini Noodles with Creamy Avocado Pesto

Try this light and refreshing raw zucchini noodle dish, topped with a creamy avocado pesto that’s bursting with flavor.


  • 2 large zucchinis
  • 1 ripe avocado
  • 1 cup fresh basil leaves
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • Cherry tomatoes, for garnish


  • Using a spiralizer or vegetable peeler, create zucchini noodles and set aside in a large bowl.
  • In a food processor or blender, combine avocado, basil, pine nuts, garlic, lemon juice, olive oil, salt, and pepper. Process until smooth and creamy.
  • Toss zucchini noodles with avocado pesto until evenly coated. Top with cherry tomatoes and serve immediately.
