Ingredients:
- 2 large zucchinis
- 1 ripe avocado
- 1 cup fresh basil leaves
- 1/4 cup pine nuts
- 2 cloves garlic
- 1 tablespoon lemon juice
- 1/4 cup olive oil
- Salt and pepper, to taste
- Cherry tomatoes, for garnish
Instructions:
- Using a spiralizer or vegetable peeler, create zucchini noodles and set aside in a large bowl.
